Vegan Roasted Cauliflower Shawarma Pitas

A hot sheet pan turns cauliflower into a crisp-edged shawarma-style filling, while late-added chickpeas stay tender and the cool vegetables bring contrast.
Four warm pitas are filled with deeply browned spiced cauliflower, chickpeas, cabbage, cucumber, tomatoes, and tahini sauce.

These vegan pitas hinge on contrast: deeply browned, warmly spiced cauliflower meets creamy chickpeas, crunchy cabbage, and a tart tahini drizzle. The sequencing keeps each component distinct, with the vegetables assembled fresh and the bread warmed only at the end.

Begin with a truly hot pan

Preheating the sheet pan gives the cauliflower immediate contact heat, which colors its cut surfaces before the interior has time to turn soft. Spread the florets with space between them and resist stirring during the first roast so that contact can do its work.

Warm spices, clear edges

Cumin, coriander, paprika, and a small amount of cinnamon create the savory, aromatic profile without masking the cauliflower. Oil carries the spices across every crevice and helps the florets develop those dark, crisp edges that make the filling satisfying.

Spiced cauliflower florets roast in a single layer on a dark sheet pan with their cut edges browning.

Add chickpeas late

Chickpeas need only enough oven time to become hot and pick up the fragrant pan seasoning. Adding them after the cauliflower has started browning keeps their centers creamy, instead of leaving them leathery or dry.

Whisk the sauce through its pause

Tahini often tightens when lemon first goes in; that is expected, not a failure. Keep whisking in ice water gradually until the mixture changes from dense paste to a thick, pourable ribbon that will reach every layer of the pita.

A crisp browned cauliflower floret, creamy chickpea, cabbage, cucumber, tomato, and tahini sauce fill a warm pita.

Warm, then fill

Foil traps enough steam to make the pitas flexible without drying them out, so they can hold a generous filling. Assemble close to serving time and let everyone add extra sauce as needed for the balance they like.

Vegan Roasted Cauliflower Shawarma Pitas

4 servings
55 minutes total

Ingredients

  • •  1 large cauliflower, cut into 1-inch florets
  • •  3 tbsp extra-virgin olive oil, divided
  • •  1 1/2 tsp ground cumin
  • •  1 tsp ground coriander
  • •  1 tsp paprika
  • •  1/4 tsp ground cinnamon
  • •  1 (15-oz) can drained and rinsed chickpeas
  • •  1 tsp kosher salt, divided
  • •  3 cups shredded green cabbage
  • •  1 English cucumber, thinly sliced
  • •  2 medium tomatoes, thinly sliced
  • •  1/3 cup tahini, juice from 1 lemon
  • •  1 garlic clove, and 3 to 5 tbsp ice water
  • •  4 vegan pitas

Method

  1. Heat the oven

Set a rack in the upper third of the oven and heat it to 450 F; place a large rimmed sheet pan in the oven as it heats.

Look for: The empty sheet pan is hot enough that a drop of water evaporates immediately.

  2. Season the cauliflower

Toss the cauliflower with 2 tbsp olive oil, cumin, coriander, paprika, cinnamon, and 3/4 tsp salt until the florets are evenly coated.

Look for: No dry spice pockets remain and the cut cauliflower faces have a light sheen.

  3. Start the cauliflower

Carefully spread the seasoned cauliflower over the hot sheet pan in one uncrowded layer and roast at 450 F for 17 minutes without stirring.

Look for: The underside edges are dark golden and the florets still feel firm when pierced.

  4. Make lemon-tahini sauce

Whisk tahini, lemon juice, garlic, and 3 tbsp ice water until smooth; add the remaining ice water a spoonful at a time until it pours in a thick ribbon.

Look for: The sauce may seize at first, then loosens to a creamy drizzle after the water is whisked in.

  5. Prepare the fresh fillings

Combine the shredded cabbage, cucumber, and tomatoes in a bowl with the remaining 1 tbsp olive oil and 1/4 tsp salt, then toss lightly.

Look for: The vegetables are evenly glossy but the cabbage remains crisp and the tomato slices stay intact.

  6. Add the chickpeas

Scatter the chickpeas around the cauliflower, shake the pan to coat them in the spiced oil, and roast at 450 F for 8 minutes more.

Look for: The cauliflower has crisp, deeply browned edges while the chickpeas are hot and creamy inside rather than dry.

  7. Warm the pitas

Stack the vegan pitas in foil and warm them on the oven rack for 3 minutes, just until pliable and steamy; keep the foil closed until serving.

Look for: Each pita bends without cracking and feels warm through the foil.

  8. Fill and serve

Divide the warm pitas among four plates, fill with cabbage salad, roasted cauliflower, and chickpeas, then drizzle generously with lemon-tahini sauce.

Look for: Each pita has contrasting crisp cauliflower, creamy chickpeas, cool vegetables, and a visible sauce drizzle.
