Thin and Crispy Chocolate Chip Cookies

A thin disk, restrained flour, and a thorough golden bake deliver chocolate chip cookie flavor with a clean, brittle snap.

These cookies are deliberately thin enough to break sharply rather than bend. Butter, vanilla, a little brown sugar, and mini chocolate chips keep the familiar chocolate chip cookie flavor while the golden bake drives off moisture.

Build a dough that spreads

Warm melted butter and mostly granulated sugar make a soft dough that flows outward in the oven. A small amount of brown sugar adds caramel flavor without turning the centers soft, while egg white binds the dough without the richness of a yolk.

Start thin and leave space

Press each tablespoon of dough into a thin disk before baking and leave three inches between portions. Mini chips distribute chocolate through that shallow layer without creating bulky mounds that stay soft around the chips.

Thin disks of chocolate chip cookie dough sit widely spaced on a parchment-lined baking sheet.
Flattened, well-spaced dough disks are ready for the oven.

Bake past pale

The reliable cue is a golden-brown center with slightly darker edges, not merely a browned rim. Rotate the sheet halfway so all the thin cookies color evenly; a pale center can remain flexible after cooling.

Let the snap develop

The cookies are fragile when hot, so give them five minutes on the baking sheet before moving them to a rack. Cooling uncovered lets remaining steam escape; once they are fully cool, a cookie should break cleanly with a sharp snap.

Thin and Crispy Chocolate Chip Cookies

24 cookies
77 minutes total

Ingredients

  • •  1/2 cup (113 g) unsalted butter, melted and cooled until warm
  • •  3/4 cup (150 g) granulated sugar
  • •  2 tbsp (25 g) packed light brown sugar
  • •  1 large egg white
  • •  1 tsp vanilla extract
  • •  1 cup (120 g) all-purpose flour
  • •  1/8 tsp baking soda
  • •  1/2 tsp fine salt
  • •  3/4 cup (120 g) mini semisweet chocolate chips

Method

  1. Prepare oven and pans

Heat the oven to 350 F with a rack in the center and line two light-colored baking sheets with parchment; avoid dark pans, which brown the thin edges too quickly.

Look for: Oven is fully preheated and both sheets are lined.

  2. Dissolve the sugars

Whisk the warm melted butter with the granulated sugar and light brown sugar for 1 minute, until glossy and evenly blended; a little sugar grain is expected.

Look for: Mixture is glossy with no separate butter puddles.

  3. Add egg white and vanilla

Whisk in the egg white and vanilla extract for 30 seconds, until the mixture thickens slightly and looks uniform rather than streaky.

Look for: No clear egg-white streaks remain.

  4. Finish the dough

Stir in the flour, baking soda, and fine salt just until no dry flour remains, then fold in the mini chocolate chips; the dough should be soft and spreadable, not stiff.

Look for: No flour pockets remain and the chips are evenly scattered.

  5. Portion and flatten

Drop level 1-tbsp portions of dough onto the sheets, 3 inches apart, and press each into a thin 2-inch disk; bake only one sheet at a time so heat reaches the cookies evenly.

Look for: Each disk is thin and has at least 3 inches of clear space around it.

  6. Bake until deeply golden

Bake each sheet at 350 F for 14 to 16 minutes, rotating halfway, until the centers are golden brown and the edges are a shade darker; pale centers will cool chewy.

Look for: Centers are golden brown, edges are darker, and no pale dough remains.

  7. Set before moving

Leave the baked cookies on their sheet for 5 minutes so the fragile hot disks firm up, then slide them onto a wire rack without stacking.

Look for: Cookies lift without bending or tearing.

  8. Cool for the snap

Cool the cookies uncovered on the rack for at least 20 minutes, until completely room temperature and brittle enough to snap cleanly; store only after fully cool in an airtight container.

Look for: A cooled cookie breaks with a sharp snap instead of bending.
