Rich Fudgy Brownies

Melted bittersweet chocolate, cocoa, and a vigorous egg-and-sugar whisk deliver a shiny top over the dense, moist center that defines a fudgy brownie.

These brownies lean unapologetically dense: melted chocolate supplies richness, cocoa deepens the flavor, and a modest amount of flour keeps the crumb from turning cakey. The key is to bake only until the edges set and the center yields thick moist crumbs, then let residual heat complete the set in the pan.

Use chocolate and cocoa together

Bittersweet chocolate gives the brownies their dense, truffle-like body, while Dutch-process cocoa brings a dark, rounded chocolate note without adding extra liquid. Whisking the cocoa into the warm melted mixture blooms it into a smooth base instead of leaving dry pockets in the finished crumb.

Whisk for the crackly top

Give the eggs and sugar a vigorous whisk until the mixture becomes pale and glossy, then stream in the warm chocolate while whisking. That glossy structure rises to the surface in the oven and bakes into the thin, shiny, crackled lid; once flour enters, fold only until it disappears.

Keep the mix-in optional

Toasted walnuts or pecans add a welcome bitter, crunchy contrast to the soft center, but the batter stands on its own if you prefer a pure chocolate square. Fold the nuts in at the end so they remain evenly distributed, then smooth the thick batter level for even baking.

Stop before the tester is clean

Start checking early and trust the combination of cues: shiny crackles on top, edges that look set, and a center that no longer ripples when the pan moves. A tester should emerge with thick moist crumbs, not wet batter and not a clean blade; cooling in the pan lets the still-soft center settle into its fudgy texture.

Rich Fudgy Brownies

78 minutes total

Ingredients

  • •  1/2 cup unsalted butter, plus more for the pan
  • •  6 oz bittersweet chocolate, finely chopped
  • •  1/2 cup Dutch-process cocoa powder
  • •  1 1/4 cups granulated sugar
  • •  3 large eggs, at room temperature
  • •  2 tsp vanilla extract
  • •  3/4 tsp kosher salt
  • •  3/4 cup all-purpose flour
  • •  3/4 cup toasted walnuts or pecans, optional
  • •  1/4 tsp flaky sea salt, for finishing

Method

  1. Prepare the pan

Set a rack in the middle of the oven and heat to 325 F. Butter an 8x8-inch or 9x9-inch metal baking pan, then line it with a parchment sling.

Look for: The parchment overhangs two sides so the cooled slab can lift out easily.

  2. Melt the chocolate

Melt the butter and bittersweet chocolate together in a medium saucepan over low heat, stirring until glossy and smooth; remove from the heat.

Look for: The mixture is fully smooth and warm, with no visible chocolate pieces.

  3. Bloom the cocoa

Whisk the Dutch-process cocoa powder into the warm chocolate mixture until it is dark, satiny, and free of dry cocoa pockets.

Look for: The batter base looks almost black and clings smoothly to the whisk.

  4. Whisk eggs and sugar

In a large bowl, whisk the granulated sugar, room-temperature eggs, vanilla extract, and kosher salt vigorously for 2 minutes, until thickened, paler, and glossy.

Look for: A lifted whisk leaves a ribbon that sits briefly on the surface before disappearing.

  5. Build the batter

Slowly whisk the warm chocolate mixture into the egg mixture until glossy, then fold in the all-purpose flour just until no dry streaks remain.

Look for: The thick batter is shiny and cohesive; stop folding as soon as the flour disappears.

  6. Add nuts if desired

Fold in the toasted walnuts or pecans, if using, then scrape the batter into the prepared pan and smooth the top into an even layer.

Look for: Optional nuts are evenly distributed and the batter reaches all four corners.

  7. Bake until fudgy

Bake at 325 F for 24 to 30 minutes, beginning to check early; the top should be shiny and crackled, the edges set, and a tester from the center should carry thick, moist crumbs rather than wet batter.

Look for: The center no longer ripples when the pan is gently nudged, but the tester is not clean.

  8. Salt and cool

Sprinkle the hot brownies with flaky sea salt, then cool completely in the pan for 30 minutes before lifting out and cutting into squares.

Look for: The slab is set enough to lift cleanly and the center firms as it cools.
