Quick Mediterranean Chicken Pitas

Thin chicken, bagged greens, and a bright yogurt-garlic sauce turn a few supermarket shortcuts into a fresh Mediterranean-style dinner.
Four whole-wheat pitas hold browned chicken, shredded lettuce, tomatoes, cucumber, and lemony yogurt sauce.

These pitas are designed for the kind of dinner that needs to move quickly without tasting improvised. Thin chicken cooks while a single bowl of Greek yogurt becomes a lemony, herby sauce, and ready-to-use greens keep the prep board nearly empty.

The result is a crisp, cool, and warm combination that is easy to set out family-style. Whole-wheat pita makes it satisfying, while juicy tomatoes and cucumber keep every bite bright.

Season straight into the skillet

The time-saving move is to coat the thin chicken with olive oil and dry garlic-herb seasoning immediately before cooking. Oil helps the seasoning stay put and encourages browning, so the flavor develops in the skillet rather than during an advance marinade.

Give the pieces a single layer and resist moving them too soon. When the first side has browned, a turn and a quick finish brings the chicken to a juicy, safe temperature.

Use the produce aisle wisely

Bagged shredded lettuce or slaw brings the crunch without washing or shredding a head of lettuce. Cherry tomatoes only need a quick halving, and a thinly sliced English cucumber adds fresh bite without peeling or seeding.

Arrange the vegetables in easy-to-reach piles while the chicken cooks. That small bit of organization makes the final build feel calm even on a busy night.

Make a no-chop yogurt sauce

Greek yogurt, lemon, dried dill, and a little of the garlic-herb seasoning make a creamy sauce in the time it takes the chicken to brown. Finely grating lemon zest directly into the bowl supplies aroma with no chopping board work.

The sauce is useful both inside the pita and at the table. It softens the seasoned chicken and catches the loose tomatoes and cucumber as you eat.

Build while everything is fresh

Warm the pita briefly in the cooling skillet so it bends around the filling without drying out. Spreading the sauce first gives the greens something to cling to, then the hot chicken can go on last.

Bring the remaining sauce and lemon wedges to the table for anyone who likes a tangier finish. The pitas are at their best as soon as they are filled, while the vegetables are still crisp.

Quick Mediterranean Chicken Pitas

4 servings
20 minutes total

Ingredients

  • •  1 lb chicken tenders or thinly sliced chicken breast
  • •  1 tbsp extra-virgin olive oil
  • •  2 tsp garlic-herb seasoning, divided
  • •  4 store-bought whole-wheat pita breads
  • •
  • •  1 pint cherry tomatoes, halved
  • •  1 English cucumber, thinly sliced
  • •  3/4 cup plain Greek yogurt
  • •  1 lemon
  • •  1 tsp dried dill

Method

  1. Start the skillet

Set a large skillet over medium-high heat while you gather the remaining ingredients so the pan is hot when the seasoned chicken is ready. Use shredded lettuce by default; use slaw mix when unavailable.

Look for: The dry skillet feels hot when you hold a hand a few inches above it.

  2. Season without marinating

Toss the chicken with olive oil and 1 1/2 tsp garlic-herb seasoning in a bowl until coated, then cook it immediately; the oil helps the dry seasoning cling and brown without a marinating wait.

Look for: Every piece has a light, even seasoning coating with no dry patches.

  3. Cook the chicken

Add the chicken in one layer and cook for 4 minutes, turn, then cook 4 to 5 minutes more until browned and the thickest piece reaches 165 F.

Look for: The chicken is browned in spots, opaque through the center, and registers 165 F.

  4. Mix the yogurt sauce

Stir the Greek yogurt, finely grated zest and juice from half the lemon, dried dill, and remaining 1/2 tsp garlic-herb seasoning until smooth.

Look for: The sauce is creamy, lightly speckled with dill, and bright enough to taste lemony.

  5. Ready the vegetables

Put the shredded lettuce or slaw mix, halved cherry tomatoes, and sliced cucumber in separate piles or a large serving bowl for fast pita assembly.

Look for: The vegetables are dry, crisp, and ready to grab by the handful.

  6. Warm the pitas

Warm the whole-wheat pitas in the turned-off skillet for about 30 seconds per side, just until flexible and lightly warm.

Look for: Each pita bends easily without turning crisp or brittle.

  7. Fill the pitas

Spread yogurt-garlic sauce over each warm pita, then layer with lettuce, tomatoes, cucumber, and the hot chicken.

Look for: Each pita has sauce under the vegetables so the filling stays in place.

  8. Finish and serve

Cut the remaining lemon half into wedges, squeeze a little over the filled pitas if desired, and serve the extra sauce alongside right away.

Look for: The pitas are warm, the vegetables remain crisp, and the chicken is still juicy.
