Black Bean and Sweet Potato Tacos

Canned black beans and microwave-softened sweet potatoes turn a smoky, colorful taco filling into a fresh weeknight meal in 20 minutes.
Four black bean and sweet potato tacos with crisp shredded cabbage, avocado, and lime-yogurt sauce on a ceramic platter.

These tacos skip the usual long sweet-potato roast without giving up the satisfying, caramel-like softness that makes it such a good match for black beans. The microwave tenderizes the potatoes while the skillet warms canned beans with cumin, smoked paprika, and chile, so the two components meet at the same time.

Freshness comes from contrast rather than extra prep: tangy lime-yogurt sauce, crisp bagged cabbage, and creamy avocado go on just before serving. The result is warm and smoky at the center, cool and bright at the edges.

Use the microwave strategically

A pierced sweet potato cooks from the inside quickly in the microwave, making it easy to scoop and mash into the skillet. This is not a substitute for crisp roasted edges; it is a deliberate route to a tender, creamy filling when time matters.

Let canned beans carry the spices

Drained canned black beans are already tender, so they only need a short warm-up to take on the cumin, smoked paprika, and chile. Crushing a few beans creates a lightly creamy texture that helps the sweet potato stay put inside the tortillas.

Protect the fresh crunch

Bagged shredded cabbage keeps this meal fast, but it still benefits from a quick toss with lime and salt. Leave it off the warm filling until assembly so it retains a clean snap against the soft beans and potatoes.

Assemble while everything is lively

Warm the tortillas only once the filling is ready, then layer in the cabbage, avocado, and sauce immediately. The lime-yogurt sauce ties the smoky filling to the fresh toppings without needing a separate salsa.

Black Bean and Sweet Potato Tacos

4 servings
20 minutes total

Ingredients

  • •  2 medium sweet potatoes, scrubbed and pierced
  • •  1 tbsp olive oil
  • •  1 tsp ground cumin
  • •  1 tsp smoked paprika
  • •  1/2 tsp chile powder
  • •  1 (15 oz) can, drained and rinsed, black beans
  • •  1/2 tsp kosher salt, divided
  • •  1 lime
  • •  1/2 cup plain Greek yogurt
  • •  12 small corn tortillas
  • •  3 cups bagged shredded cabbage
  • •  1 ripe avocado, sliced

Method

  1. Microwave the sweet potatoes

Place the pierced sweet potatoes on a microwave-safe plate and microwave on high for 6 to 8 minutes, turning once, until a knife slips through the center.

Look for: The potatoes give slightly when squeezed with a towel and a knife enters without resistance.

  2. Mix the lime-yogurt sauce

Finely grate 1 tsp lime zest, then stir it with the yogurt, 1 tbsp lime juice, and 1/4 tsp salt until smooth and spoonable.

Look for: The sauce is smooth, bright-tasting, and loose enough to drizzle.

  3. Season the cabbage

Toss the shredded cabbage with 1 tbsp lime juice and a pinch of the remaining salt, then set it aside to soften slightly while the filling cooks.

Look for: The cabbage is lightly glossy but still crisp and piled high.

  4. Warm the beans

Heat the olive oil in a large skillet over medium heat, then add the black beans, cumin, smoked paprika, chile powder, and remaining 1/4 tsp salt.

Look for: The spices bloom in the oil and coat the beans evenly.

  5. Finish the filling

Cook the beans for 4 minutes, stirring and lightly crushing about one-quarter of them, until hot and lightly creamy; cut the hot sweet potatoes open and scoop the flesh into the skillet.

Look for: The beans cling together lightly and the sweet potato folds in without large hard pieces.

  6. Mash and brighten

Gently mash the sweet potato and beans together, then squeeze in 1 tbsp lime juice and cook for 1 minute until the filling is cohesive but still textured.

Look for: The filling holds on a spoon and smells smoky, earthy, and bright.

  7. Warm the tortillas

Warm the corn tortillas in a dry skillet or directly over a low gas flame for about 1 minute total, turning until pliable with a few toasted spots.

Look for: Each tortilla bends without cracking and has a few warm browned freckles.

  8. Assemble and serve

Fill the warm tortillas with the black bean and sweet potato mixture, cabbage, avocado, and lime-yogurt sauce; serve immediately while the cabbage is crisp.

Look for: Every taco has creamy filling, crunchy cabbage, cool sauce, and avocado in each bite.
