Quick Chicken Teriyaki Rice Bowls
A lower-sugar teriyaki-style chicken bowl gets dinner on the table fast by letting the microwave and skillet do different jobs at once.

This bowl is designed around parallel work: frozen vegetables steam in the microwave while rice heats and bite-size chicken sears. The result is a complete, balanced dinner with a short ingredient list and no bottled teriyaki sauce needed.
Soy sauce, garlic, ginger, and a restrained touch of honey create the savory-sweet backbone, while a quick cornstarch slurry gives it the familiar glossy cling. Cutting the chicken small is the quiet time-saving move that keeps the skillet portion fast.
Build a lighter glaze
Mixing the sauce before the pan heats keeps the final minutes calm. The small amount of honey balances salty soy sauce and sharp ginger, while the slurry thickens only after it meets the hot skillet.
Let each appliance do one job
Microwaveable rice removes the slowest part of a grain bowl, and frozen broccoli eliminates washing and chopping. Start those components before the chicken so they are ready to join the skillet just as the glaze finishes.

Give the chicken room
A single layer exposes more chicken surface to the hot pan, building browned edges before the sauce arrives. Stir only occasionally so the pieces have time to color, then use the thermometer rather than guessing at doneness.
Assemble while everything is hot
Drain the vegetables before tossing so the sauce stays shiny instead of watery. Spoon the chicken and broccoli over warm rice right away, then add scallions for a clean, fresh contrast to the savory glaze.

Quick Chicken Teriyaki Rice Bowls
Ingredients
- •
- • 2 tbsp low-sodium soy sauce
- • 1 tbsp honey
- • 2 cloves garlic, grated
- • 1 tsp grated fresh ginger
- • 1 tsp cornstarch
- • 1 tbsp water
- • 1 tbsp neutral oil
- • 12 oz frozen broccoli florets
- • 2 microwaveable brown-rice pouches, about 8.8 oz each
- • 2 scallions, thinly sliced
Method
Mix the quick sauce
In a small bowl, stir together the soy sauce, honey, garlic, ginger, and cornstarch slurry until the cornstarch is fully dissolved. Use boneless skinless chicken breast by default; use boneless skinless chicken thighs for a richer result.
Look for: The sauce looks smooth with no white cornstarch streaks.
Start the vegetables
Put the frozen broccoli in a microwave-safe bowl with a splash of water, cover loosely, and microwave until hot and crisp-tender; drain any water.
Look for: The broccoli is bright, hot, and tender at the stem without becoming soft.
Heat the rice
While the broccoli cooks, microwave the brown-rice pouches according to their package directions, then keep the rice covered to stay warm.
Look for: The rice is steaming and separates easily when squeezed through the pouch.
Heat the skillet
Meanwhile, heat a large nonstick skillet over medium-high heat, then add the oil and swirl until it shimmers across the pan.
Look for: The oil moves quickly and has a light shimmer without smoking.
Sear the chicken
Add the chicken pieces in a single layer and cook, stirring once or twice, until browned at the edges and nearly cooked through.
Look for: The chicken pieces have browned edges and only small pink centers remain.
Glaze until done
Stir the sauce again, pour it around the chicken pieces, and cook until it bubbles, thickens, and the chicken reaches 165 F.
Look for: The sauce coats the chicken pieces in a glossy layer and an instant-read thermometer reads 165 F.
Warm the vegetables
Add the drained broccoli to the skillet and toss it with the glazed chicken pieces just until evenly coated and hot.
Look for: The broccoli is glossy and the skillet has no watery puddle.
Build the bowls
Divide the warm rice among four bowls, spoon over the chicken and broccoli, and finish each bowl with scallions.
Look for: Each bowl has rice, vegetables, glazed chicken, and a scattering of scallions.
