Korean Bibimbap with Crispy Rice
This vegetarian Korean-style bibimbap layers crisp skillet rice with gochujang-glazed mushrooms, separately seasoned vegetables, a runny egg, and toasted seaweed for a hands-on bowl that is mixed at the table.

Ingredients
4 cups cooked short-grain rice, warm or room temperature
3 tbsp neutral oil, divided
12 oz cremini mushrooms, sliced
3 tbsp gochujang, divided
2 tbsp toasted sesame oil, divided
2 tbsp rice vinegar, divided
5 oz baby spinach
2 medium carrots, cut into thin matchsticks
1 English cucumber, thinly sliced
4 large eggs, toasted sesame seeds, and roasted seaweed sheets
Equipment
Wide skillet or cast-iron pan · Thin spatula · Small bowl · Four shallow serving bowls · Tongs
Pickle and sauce
01. Toss cucumber with vinegar and salt, then drain its brine before it meets the rice so the crust stays crisp.
02. Whisk the gochujang-sesame sauce until it is loose enough to drizzle; reserve extra for the table.
Cook each topping
03. Brown mushrooms in a wide pan before adding gochujang, so the glaze clings rather than dissolves into mushroom liquid.
04. Wilt and squeeze spinach, then cook carrots only until flexible; hold every topping separately to preserve its color and texture.
Build the rice crust
05. Press rice into a thin, even oiled layer and leave it untouched over medium heat until a spatula reveals golden, nutty-smelling patches.
06. Fry eggs until the whites are set but yolks wobble, either in wells in the rice or in a separate pan.
Arrange and eat
07. Set toppings in individual wedges over the rice so every diner can see and choose each component before mixing.
08. Break the yolk and fold in sauce at the table, scraping up the golden rice crust as you go.
