Spicy Black Bean Burgers with Extra-Crispy Homemade Fries

85 min · 4 burgers with fries

Ingredients

□ 2 large russet potatoes (about 1 1/2 lb), scrubbed

□ 2 cups neutral frying oil

□ 1 1/2 tsp kosher salt, divided

□ 2 (15 oz) cans black beans

□ 1 small yellow onion

□ 1 chipotle pepper in adobo

□ 2 garlic cloves

□ 1 tsp ground cumin

□ 1 tsp smoked paprika

□ 3/4 cup panko breadcrumbs, divided

□ 4 burger buns

Directions

1. Cut fries evenly, rinse, soak 20 minutes, and dry completely.

2. Blot beans dry; mash with onion, chipotle-adobo, seasonings, and panko. Shape four patties.

3. Shallow-fry in a skillet: gentle test-fry bubbles for the first cook, lively no-smoke bubbles for the second. Salt at once.

4. Panko-coat the patties and fry in a skillet 4 to 5 minutes per side.

5. Toast buns in the skillet, assemble the burgers, and serve immediately with the fries.

Cook’s note: Dry the fries completely before frying; moisture is the enemy of a crisp crust.
