Southern-Style Peach Cobbler

80 min · 6 servings

Ingredients

□

□ 3/4 cup granulated sugar, divided

□ 2 tbsp cornstarch

□ 1 tbsp fresh lemon juice

□ 1 tsp vanilla extract

□ 1 tsp ground cinnamon, divided

□ 1 1/2 cups all-purpose flour

□ 2 tsp baking powder

□ 1/2 tsp kosher salt

□ 6 tbsp cold unsalted butter, cut into small pieces

□ 1/2 cup whole milk

Directions

1. Heat oven to 375 F and butter a 2-quart dish. Slice fresh peaches, or thaw, drain, and blot 2 lb frozen peaches.

2. Toss peaches with 1/2 cup sugar, cornstarch, lemon, vanilla, and 1/2 tsp cinnamon. Bake 15 minutes until thickly bubbling.

3. Whisk flour, baking powder, salt, 1/4 cup sugar, and 1/2 tsp cinnamon. Cut in butter, then stir in milk just until soft dough forms.

4. Drop dough in 6 mounds over hot fruit. Bake 25 minutes at 375 F until golden and bubbling; rest 15 minutes before serving.

Cook’s note: Thawed frozen peaches must be well drained so the cornstarch can make a juicy, spoonable filling.
