50 min · 4 burgers
Ingredients
□ 1 1/2 lb ground pork
□ 1 tsp smoked paprika
□ 1 tsp granulated garlic
□ 1/4 tsp chipotle powder
□ 1/2 tsp freshly ground black pepper
□ 1 1/4 tsp kosher salt, divided
□ 1 tbsp Worcestershire sauce
□ 2 lb russet potatoes
□ 2 tbsp olive oil
□ 1 tbsp neutral oil
□ 3/4 cup plain Greek yogurt
□ 1 lime
□ 1 tsp honey
□ 2 tbsp chopped fresh cilantro
□ 4 sesame burger buns
□ 4 lettuce leaves
Directions
1. Heat oven to 425 F. Cut potatoes into wedges, toss with oil and salt, and roast 18 minutes.
2. Whisk lime-yogurt dip and chill. Gently mix pork with Worcestershire, garlic, smoke, chipotle, pepper, and salt.
3. Shape four loose dimpled patties. Turn wedges and roast until browned and tender.
4. Sear burgers to 160 F in the center. Rest while toasting buns cut-side down in the same skillet.
5. Build burgers with lettuce and serve with potato wedges and cool lime-yogurt dip.
Cook’s note: Mix lightly and stop cooking each patty only when its center reaches 160 F.
