Slow-Cooker Sausage Tortellini Soup

Italian sausage, canned tomatoes, and tender cheese tortellini make a hands-off slow-cooker soup that feels deeply cozy without relying on jarred sauce.
A warm bowl of tomato sausage soup holds tender cheese tortellini, bright spinach, and a Parmesan garnish.

This soup builds a savory base from browned Italian sausage, onion, garlic, canned tomatoes, and broth before the slow cooker takes over. The tortellini joins only at the end, keeping its cheese-filled centers tender and pleasantly springy.

Start with a savory base

Browning the sausage first creates flavorful crumbles and leaves the onion a seasoned pan in which to soften. Garlic enters only briefly, so its aroma remains sweet and clear rather than bitter.

Let canned tomatoes carry the broth

Canned diced tomatoes and their juices supply tomato flavor without the sweetness or thickness of jarred pasta sauce. A long, gentle slow-cooker rest rounds their acidity into a broth that is rich enough for a cold evening.

Browned Italian sausage, diced tomatoes, and broth sit in a slow cooker before the pasta is added.

Give pasta a short finish

Refrigerated tortellini needs only a brief high-heat finish in the hot broth. Testing a piece at the stated cue is more reliable than leaving it through the full slow-cook, which can make the pasta split and soften too far.

Finish with color and richness

Spinach wilts in residual heat, preserving its bright color against the red broth. Finish each bowl with Parmesan for the classic rich version, or choose dairy-free Parmesan when a dairy-free finishing garnish is preferred.

Slow-Cooker Sausage Tortellini Soup

6 servings
270 minutes total

Ingredients

  • •  1 lb Italian sausage
  • •  1 medium yellow onion, diced
  • •  3 garlic cloves
  • •  2 (14.5 oz) cans diced tomatoes with juices
  • •  4 cups low-sodium chicken broth
  • •  1 tsp dried Italian seasoning
  • •  1/2 tsp kosher salt
  • •  1/4 tsp crushed red pepper flakes
  • •  9 oz refrigerated cheese tortellini
  • •  4 cups baby spinach, plus grated Parmesan or dairy-free Parmesan for serving

Method

  1. Brown the sausage

Cook the Italian sausage in a large skillet over medium-high heat for 7 minutes, breaking it into small crumbles until no pink remains.

Look for: The sausage is browned in small crumbles with no pink centers.

  2. Soften the aromatics

Add the onion to the skillet and cook over medium heat for 5 minutes until softened, then stir in the garlic for 30 seconds until fragrant.

Look for: The onion looks translucent and the garlic smells fragrant without browning.

  3. Fill the slow cooker

Scrape the sausage, onion, and garlic into a 5- to 6-quart slow cooker with the canned tomatoes and their juices, chicken broth, Italian seasoning, salt, and red pepper flakes.

Look for: The broth is evenly seasoned and the tomatoes are submerged among the sausage.

  4. Slow-cook the soup

Cover and cook on low for 4 hours, until the tomato broth tastes rounded and the sausage is fully tender.

Look for: The soup is gently steaming and the broth tastes savory rather than sharp.

  5. Add tortellini late

Stir the refrigerated cheese tortellini into the hot soup, cover, and cook on high for 8 minutes, checking that the pasta is tender but still springy.

Look for: The tortellini float and yield to a bite without splitting or turning mushy.

  6. Wilt the spinach

Stir in the baby spinach, cover, and let it wilt in the residual heat for 2 minutes; taste and add more salt if needed.

Look for: The spinach is bright green and just wilted, not dull or overcooked.

  7. Serve the soup

Ladle the soup into warm bowls and finish with grated Parmesan, or use dairy-free Parmesan for a dairy-free finishing garnish.

Look for: Each bowl has tender tortellini, glossy spinach, and a generous spoonful of tomato broth.
