Savory Miso Oatmeal with Sesame Mushrooms and Jammy Eggs

White miso turns a bowl of oats savory, while browned mushrooms and a jammy egg make it satisfying enough for brunch.

Rolled oats become a creamy, gently chewy base when simmered with water instead of milk. White miso gives them a rounded savory flavor without competing with the mushrooms on top. The egg and scallion greens make each bowl feel complete.

A different direction for oats

This bowl treats oatmeal like a warm grain dish. The oats stay plain while they cook, which makes it easy to adjust their texture before the miso goes in. Browned mushrooms provide the deeper flavor that a sweet topping would not.

Let the skillet dry out

Mushrooms release moisture as they heat, so spreading them in one layer gives that liquid room to evaporate. Leave the slices undisturbed first, then stir only after their edges have browned. Sesame oil and scallion whites go in at the end, where their aroma stays clear.

Stir in miso after simmering

Whisking miso with a little hot oat liquid prevents salty pockets in the finished porridge. Stir it into the oats once the pan is off heat, then add water only if the mixture needs to flow more easily. That keeps the miso flavor distinct and the oatmeal creamy rather than stiff.

Build each bowl while warm

A small splash of rice vinegar brightens the rich mushrooms without thinning the oats. Spoon them over the oatmeal, then add a halved soft-yolk egg so the yolk can run into the base. Scallion greens and sesame seeds bring freshness and a little crunch at the table.

Savory Miso Oatmeal with Sesame Mushrooms and Jammy Eggs

4 bowls
30 minutes total

Ingredients

  • •  1 cup old-fashioned rolled oats
  • •  2 tbsp white miso
  • •  12 oz cremini mushrooms, sliced
  • •  1 tbsp neutral oil
  • •  2 tsp toasted sesame oil
  • •  4 large eggs
  • •  3 scallions, thinly sliced, whites and greens separated
  • •  2 tsp rice vinegar
  • •  2 tsp toasted sesame seeds
  • •  1/4 tsp kosher salt

Method

  1. Prepare the vegetables

Slice the cremini mushrooms and scallions; keep the scallion whites separate from the greens so they can cook at different times.

Look for: The mushroom slices are even and the scallion whites and greens are in separate piles.

  2. Cook the eggs

Bring a small saucepan of water to a boil, lower in the eggs, and simmer for 7 minutes. Transfer them to cold water, then peel when cool enough to handle.

Look for: The whites are set while the yolks remain soft after peeling.

  3. Simmer the oats

In a second saucepan, bring 3 cups water to a boil. Stir in the rolled oats, reduce to a gentle simmer, and cook for 10 minutes, stirring occasionally, until creamy with some texture left.

Look for: The oats hold a soft mound on a spoon but still have distinct flakes.

  4. Brown the mushrooms

While the oats simmer, heat the neutral oil in a large skillet over medium-high heat. Spread the mushrooms in one layer and cook undisturbed for 5 minutes, then stir for 2 minutes until browned and their moisture has evaporated.

Look for: The mushroom edges are golden and the skillet looks dry rather than watery.

  5. Season the mushrooms

Sprinkle the mushrooms with kosher salt, add the scallion whites and toasted sesame oil, and toss for 1 minute until the whites soften and the pan smells nutty.

Look for: The scallion whites have softened and the mushrooms look glossy.

  6. Add the miso off heat

Take the oats off the heat. Whisk the white miso with 2 tbsp of hot oat liquid in a small bowl until smooth, then stir it back into the oats; loosen with a splash of hot water if needed.

Look for: The miso is fully dispersed and the oatmeal flows slowly from a spoon.

  7. Brighten the mushrooms

Turn off the skillet heat and toss the browned mushrooms with the rice vinegar, scraping up any savory bits from the pan.

Look for: The vinegar has coated the mushrooms without leaving liquid pooling in the skillet.

  8. Assemble the bowls

Divide the oatmeal among 4 bowls, top with the sesame mushrooms, and halve one jammy egg over each bowl. Scatter over the scallion greens and toasted sesame seeds; serve warm.

Look for: Each bowl has creamy oats, browned mushrooms, a soft-yolk egg, and a fresh green finish.
