Juicy Pork Burgers with Charred Corn and Green Beans

45 min · 4 servings

Ingredients

□ 1 1/2 lb ground pork

□ 1/3 cup plain dry breadcrumbs

□ 1 large egg

□ 2 garlic cloves, finely grated

□ 1 tbsp finely chopped fresh sage

□ 1 tsp kosher salt

□ 1/2 tsp freshly ground black pepper

□ 1/2 cup mayonnaise

□ 1 tbsp Dijon mustard

□ 1 tbsp apple cider vinegar

□ 1 tsp honey

□ 4 ears fresh corn, husked

□ 12 oz green beans, trimmed

□ 1 tbsp neutral oil

□ 4 burger buns, split

□ 1 tbsp unsalted butter, softened

Directions

1. Whisk mayonnaise, Dijon, cider vinegar, and honey for sauce. Gently mix pork, crumbs, egg, garlic, sage, salt, and pepper.

2. Shape and dimple 4 patties. Heat and lightly oil a medium-high grill or skillet.

3. Char corn until blistered, then cook green beans until browned in spots but still crisp-tender.

4. Cook patties without pressing until the centers reach 160 F. Butter and toast buns cut-side down.

5. Rest patties for 5 minutes; cut corn from cobs. Sauce buns, add patties, and serve with vegetables.

Cook’s note: Check the center of each patty with an instant-read thermometer; avoid pressing out juices.
