20 min · 4 servings
Ingredients
□ 1 lb lean ground turkey

□ 1 1/2 cups frozen corn
□ 1 cup chunky salsa
□ 1/2 cup water

Directions
1. Heat oil in a large skillet. Cook turkey with taco seasoning for 6 minutes, breaking it into crumbles, until it reaches 165 F.
2. Stir in black beans, frozen corn, salsa, and water. Simmer 4 minutes until the corn is hot and the sauce coats the filling.
3. Top with cheese, cover, and melt. Warm tortillas or rice, or use cold bagged lettuce, then serve the skillet filling.
Cook’s note: Salsa and frozen corn deliver flavor and moisture, so no chopping or separate sauce pan is needed.
