Honeyed Chokecherry Wóžapi
40 min · 6 servings
Ingredients
□
□ 2 cups water
□
□ 1 tbsp cornstarch
□ 2 tbsp cold water
□ 1/8 tsp fine salt
Directions
1. Rinse 2 lb fresh chokecherries, or use 2 lb frozen tart berries. Add 2 cups water and 1/8 tsp salt; simmer gently for 18 minutes.
2. Strain gently; do not crush fresh chokecherry pits. Return pulp and juice to the pan and stir in 3 tbsp honey, or 3 tbsp maple syrup instead.
3. Whisk 1 tbsp cornstarch with 2 tbsp cold water. Stir into fruit and simmer 2 minutes, until glossy and softly thick.
4. Rest 5 minutes. Serve warm or chill until cool; offer with bread, corn cakes, or game.
Cook’s note: Keep the sweetener restrained so the tart berries remain the focus.
