Homemade Chicken Pot Pie with Crisp Green Salad

A ready-made pastry lid turns a thick, herb-laced chicken and mushroom filling into a practical pot pie dinner, with a crisp vinaigrette salad alongside.
Golden chicken pot pie with a thick chicken and vegetable filling sits beside a lightly dressed green salad.

This pot pie earns its flaky top without asking for homemade puff pastry: a refrigerated rolled pie crust bakes directly over the filling. The key to a calm, spoonable serving is reducing the gravy in the skillet before the pie is assembled, then letting the finished pie rest while the salad is dressed.

Brown first, finish gently

Brown the chicken only until its edges pick up color, then take it out of the skillet. It finishes in the herb gravy after the vegetables and mushrooms have had time to concentrate, which keeps the chicken tender and gives the sauce savory depth.

Cook the gravy to the right texture

The flour needs a brief turn in the skillet before the sherry, stock, and cream go in. Keep stirring as the mixture simmers and use the pan trail as the decision point: once a spoon leaves a clear path, the filling has enough body to sit beneath the crust without becoming runny.

A spoon leaves a clear trail through the thick chicken, mushroom, and vegetable filling in a skillet.

A reliable flaky lid

A refrigerated rolled pie crust is a useful shortcut here because the filling is already hot and cooked. Lay it on loosely, crimp without stretching, and vent it well; the steam can escape while the pastry bakes into distinct golden layers.

Bring brightness to the table

The green salad is deliberately simple: a sharp vinaigrette and sturdy mixed greens give the rich filling a clean counterpoint. Toss it only as the pie comes out of its rest, so the leaves stay crisp beside the warm, creamy serving.

Homemade Chicken Pot Pie with Crisp Green Salad

4 servings
80 minutes total

Ingredients

  • •  2 tbsp unsalted butter
  • •  1 lb boneless skinless chicken thighs
  • •  2 carrots
  • •  2 celery ribs
  • •  1 yellow onion, diced
  • •  8 oz cremini mushrooms, sliced
  • •  1/3 cup all-purpose flour
  • •  1/4 cup dry sherry
  • •  2 cups chicken stock
  • •  1/2 cup heavy cream
  • •  1 tsp dried thyme
  • •  1 tsp chopped rosemary
  • •  kosher salt
  • •  black pepper
  • •  1 cup frozen peas
  • •  1 refrigerated rolled pie crust
  • •  5 oz mixed greens
  • •  2 tbsp olive oil
  • •  1 tbsp red wine vinegar
  • •  1 tsp Dijon mustard

Method

  1. Heat the oven

Set a rack in the lower third of the oven and heat it to 400 F while you prepare the filling.

Look for: The oven signals that it is fully preheated.

  2. Brown the chicken

Melt 1 tbsp butter in a large skillet over medium-high heat, season the chicken thighs with salt and black pepper, and cook until browned but not cooked through; transfer to a plate.

Look for: The chicken has browned edges and leaves a clear track when moved.

  3. Soften the vegetables

Add the remaining butter, carrots, celery, yellow onion, and cremini mushrooms to the skillet with a pinch of salt; cook over medium heat until the vegetables are softened and the mushrooms have released their moisture.

Look for: The onion is translucent and the skillet looks nearly dry again.

  4. Build a thick gravy

Stir all-purpose flour into the vegetables for 1 minute, then slowly add dry sherry, chicken stock, heavy cream, dried thyme, and chopped rosemary; simmer, stirring, until the gravy is thick enough to leave a clean trail on the pan bottom.

Look for: A spoon drawn across the skillet leaves a track that does not immediately fill in.

  5. Finish the filling

Fold the browned chicken and frozen peas into the thick gravy, simmer until the chicken is cooked through, then taste and adjust the kosher salt and black pepper.

Look for: The peas are bright green and the gravy coats the chicken instead of pooling thinly.

  6. Top the pie

Spoon the filling into a 9-inch deep-dish pie plate, unroll the refrigerated rolled pie crust over it, trim the overhang, crimp the edge, and cut several vents in the top.

Look for: The crust lies loosely over the filling and the vents expose small openings for steam.

  7. Bake until flaky

Bake the pot pie at 400 F until the crust is deeply golden and the filling bubbles visibly through the vents.

Look for: The crust is golden brown from edge to center and thick bubbles rise through the vents.

  8. Dress the salad

Whisk olive oil, red wine vinegar, Dijon mustard, salt, and black pepper in a large bowl, then toss with mixed greens just before serving.

Look for: The greens are lightly glossy and not weighed down with dressing.

  9. Rest and serve

Let the baked pot pie rest for 10 minutes so the thick filling settles, then spoon it into bowls and serve with the crisp green salad.

Look for: The filling stays mounded on a spoon rather than running across the plate.
