Fried Feta, Pear, and Walnut Arugula Salad

Crisp fried feta, salted walnuts, pear, and peppery arugula turn a sharp garlic-shallot balsamic dressing into an unexpectedly complete salad.
Golden fried feta rectangles rest over arugula with pear slices and toasted walnuts on a pale platter.

This salad works by putting warm, rich elements against cool, peppery greens rather than relying on a long ingredient list. The fried feta brings its own crisp shell and creamy center, while pear gives the plate clean sweetness without the familiar tomato-and-beet route.

Each component has a job. Toasted walnuts add salt and snap, shallot and garlic give the balsamic dressing a savory edge, and the arugula keeps the finished bite alert enough to carry the warm cheese.

Start with the smallest source of crunch

Walnuts become more fragrant and less raw-tasting after a few minutes in a dry skillet, which makes their bitterness feel intentional beside the sweet pear. Salting them in the pan seasons the nuts directly, so their flavor remains distinct even after the dressing arrives.

Transfer them as soon as they darken slightly. Their residual heat is enough to keep cooking them, and setting them aside early protects the clean toasted flavor the salad needs.

Give feta a crisp outer life

Feta is often crumbled into a salad, but breading it changes its role completely. The panko gives the salty cheese a crisp exterior that can stand up to the juicy pear and balsamic without disappearing into the greens.

Drying and coating the rectangles in a deliberate flour, egg, and panko sequence keeps the crust intact. A single turn in moderate heat is enough to brown the crumbs while preserving the feta's recognizable, creamy interior.

Panko-coated feta, toasted walnuts, and garlic-shallot dressing are arranged for assembling the salad.

Let the dressing be bright, not heavy

The balsamic dressing is sharp enough to cut through fried cheese, but olive oil keeps it from tasting austere. Giving the shallot and garlic a few minutes in the vinaigrette takes away their raw edge without adding another cooking step.

A final whisk matters because the dressing will separate as it sits. Use it lightly and at the last minute; this salad needs a sheen on the leaves, not a pool beneath them.

Assemble for contrast

Build the arugula, pear, and walnuts on a wide platter before the feta comes out of the pan. That arrangement keeps the hot pieces from steaming the whole bowl and lets the toppings stay visible rather than sinking below the leaves.

Serve immediately after dressing. The best forkful collects peppery greens, tender pear, a salty walnut, and a piece of feta while the crust still cracks against the creamy center.

Fried Feta, Pear, and Walnut Arugula Salad

4 servings
30 minutes total

Ingredients

  • •  5 oz baby arugula
  • •  8 oz block feta, cut into 4 rectangles
  • •  1/3 cup all-purpose flour
  • •  1 large egg, beaten
  • •  3/4 cup panko breadcrumbs
  • •  1/2 cup walnut pieces
  • •  1/2 tsp kosher salt, divided
  • •  1 firm ripe pear, thinly sliced
  • •  1 small shallot, minced
  • •  1 garlic clove, finely grated
  • •  4 tbsp extra-virgin olive oil
  • •  3 tbsp balsamic vinegar

Method

  1. Toast the walnuts

Warm a dry skillet over medium heat, add the walnut pieces and 1/4 tsp salt, and toast while stirring until fragrant and a shade darker; transfer them to a plate to stop cooking.

Look for: The walnuts smell nutty, look slightly darker, and have no scorched spots.

  2. Make the garlic balsamic dressing

Whisk the shallot, grated garlic, balsamic vinegar, 2 tbsp olive oil, and remaining 1/4 tsp salt until the dressing looks lightly emulsified; let it stand while you prepare the feta.

Look for: The oil and vinegar no longer separate immediately, and the shallot is evenly suspended.

  3. Set up the feta coating

Place the flour, beaten egg, and panko in three shallow dishes. Pat the feta rectangles dry so the flour coating can cling instead of sliding off.

Look for: The feta surfaces are dry and each coating component is in its own shallow dish.

  4. Bread the feta

Coat each feta rectangle in flour, then egg, then panko, pressing the crumbs gently onto all sides. Set the breaded feta on a clean plate without stacking it.

Look for: No bare feta remains visible and the panko forms an even, dry coating.

  5. Fry until crisp

Heat the remaining 2 tbsp olive oil in the skillet over medium heat, fry the feta in one layer until deeply golden on the first side, then turn once and brown the second side.

Look for: The panko is deeply golden and crisp, while the feta remains in intact rectangles.

  6. Build the salad

Spread the arugula on a wide platter, scatter over the pear slices and toasted walnuts, then nestle the hot fried feta rectangles across the greens.

Look for: Pear, walnuts, and feta are distributed so each serving can include all three.

  7. Dress and serve

Whisk the dressing once more, drizzle it lightly over the arugula and pears, and serve immediately while the feta coating is still crisp and the greens are unwilted.

Look for: The arugula has a light sheen but is not pooled with dressing, and the feta is still crisp.
