Creamy Cucumber and Dill Salad

40 min · 6 servings

Ingredients

□ 2 lb firm cucumbers

□ 1 1/4 tsp kosher salt, divided

□ 1/4 small red onion, very thinly sliced

□ 3/4 cup sour cream

□ 1 tbsp mayonnaise

□ 1 tbsp white-wine vinegar

□ 1 tsp granulated sugar

□ 1/2 tsp freshly ground black pepper

□ 1/3 cup chopped fresh dill

Directions

1. Slice cucumbers into even rounds and the red onion paper-thin. Toss cucumber with 1 tsp salt and drain in a colander for 10 minutes.

2. Discard the liquid and pat the cucumber rounds thoroughly dry; do not rinse away their seasoning.

3. Whisk sour cream, mayonnaise, vinegar, sugar, and pepper. Fold in red onion and dill, cover, and chill 10 minutes.

4. Fold cucumbers into dressing just before serving. Chill the dressed salad for 5 minutes to settle the flavors.

5. Taste and add up to 1/4 tsp more salt if needed; serve cold while crisp.

Cook’s note: Dry cucumber slices well, then add them to the dressing close to serving.
