Chipotle-Glazed Chicken Bites over Rice with Green Beans

Smoky chipotle, honey, and lime make quick chicken bites feel special, while tender rice and crisp green beans turn the skillet into a complete dinner.

This bowl leans on contrast: a sweet-hot glaze clings to browned chicken, the rice catches every extra drop, and bright green beans keep the plate from feeling heavy. The rice starts first, leaving time to build the glaze and brown the chicken while it simmers.

Give the rice a clean start

Rinsing removes surface starch before the rice meets the pot, helping the finished grains stay separate enough to catch the glossy chicken glaze without becoming pasty. Drain it well before cooking so the measured water can absorb predictably during the covered simmer.

Sweet heat with a bright edge

Chipotle brings smoke and heat, honey rounds its edges, and lime keeps the sauce lively. The result is bold but balanced enough to spoon over a full bowl of rice.

Brown before glazing

Let the chicken take on color before adding the honeyed sauce. That browned surface gives the glaze something savory to cling to and keeps the skillet flavor deep rather than merely sweet.

Finish with green beans

Cooking the beans in the same skillet gathers the last traces of the chipotle glaze. Serve them while still bright and crisp beside the rice and chicken for a useful fresh contrast.

Chipotle-Glazed Chicken Bites over Rice with Green Beans

4 servings
45 minutes total

Ingredients

  • •  1 1/2 cups long-grain white rice
  • •  3 cups water
  • •  1 1/4 tsp kosher salt, divided
  • •  1 1/2 lb boneless, skinless chicken thighs, cut into bite-size pieces
  • •  2 tbsp neutral oil, divided
  • •  2 chipotle peppers in adobo, finely chopped
  • •  2 tbsp honey
  • •  1 lime, juiced
  • •  2 garlic cloves, finely grated
  • •  12 oz green beans, trimmed

Method

  1. Rinse the rice

Rinse the long-grain white rice in a fine sieve under cool water until the water runs mostly clear, then drain it well.

Look for: The water running from the sieve is only lightly cloudy.

  2. Cook the rice

Bring the white rice, water, and 1/2 tsp salt to a boil in a covered saucepan, reduce to low, and cook for 18 minutes until the water is absorbed.

Look for: Small steam vents escape from the lid and no loose water remains around the rice.

  3. Mix the chipotle glaze

Stir the chopped chipotle peppers in adobo, honey, lime juice, finely grated garlic cloves, 1 tbsp oil, and 1/4 tsp salt into a glossy red-brown glaze.

Look for: The honey is fully blended and the glaze clings to a spoon.

  4. Season the chicken

Pat the chicken thighs dry and toss the bite-size pieces with 1/4 tsp salt until each piece is evenly seasoned.

Look for: The chicken pieces are dry on the surface and evenly seasoned.

  5. Sear the chicken bites

Heat the remaining 1 tbsp oil in a large skillet over medium-high heat, add the chicken in one layer, and sear for 5 minutes until browned underneath.

Look for: The chicken releases from the skillet easily and has browned edges.

  6. Glaze the chicken

Turn the chicken, pour in the chipotle glaze, and cook for 4 minutes until it bubbles, coats the bites, and the thickest piece reaches 165 F.

Look for: The glaze is sticky and bubbling, and the chicken registers 165 F.

  7. Cook the green beans

Move the glazed chicken to a plate, add the green beans and 2 tbsp water to the same skillet, and cook over medium heat for 4 minutes until bright green and crisp-tender.

Look for: The green beans are bright green and bend slightly without going limp.

  8. Rest and serve

Fluff the rice, let the chicken rest for 5 minutes, then divide the rice among bowls and top with chicken bites, glaze, and green beans.

Look for: The rice grains separate easily and the chicken glaze remains glossy.
