Chicken, Broccoli, and Wild Rice Casserole
A from-scratch mushroom-thyme sauce binds juicy chicken, wild rice, and bright broccoli beneath a crisp Parmesan-panko crust.

This casserole coordinates the stovetop work with the rice simmer, keeping a complete from-scratch dinner near the target cooking time. Browning the chicken and mushrooms builds savory depth, while brief steaming protects the broccoli's color and texture.
Protect the grain
Wild-rice blends vary, so use tenderness rather than a creamy texture as the stopping point and drain away any water left in the pan. Gentle folding and a loose transfer to the baking dish preserve the individual grains through the final bake.
Build flavor in stages
Chicken browns first but stays slightly underdone so it remains juicy after baking. Mushrooms get the same hot skillet next, and cooking away their moisture concentrates their flavor before the thyme-garlic sauce comes together.

Make creaminess without canned soup
Flour thickens chicken stock and whole milk into a savory sauce that coats rather than floods the filling. Dijon, Parmesan, garlic, and thyme sharpen the flavor, while the mushroom fond gives the sauce its cooked-all-day character.
Plan ahead and revive the crust
For advance preparation, chill the assembled filling without its crumb topping, then add the topping just before baking. Reheat leftovers covered so the filling warms without drying, and uncover at the end to bring the Parmesan-panko crust back to life.

Chicken, Broccoli, and Wild Rice Casserole
Ingredients
- • 1 1/2 cups uncooked wild-rice blend
- • 2 1/2 cups water
- • 2 tsp kosher salt, divided
- • 1 1/2 lb boneless skinless chicken thighs, cut into 1-inch pieces
- • 1/2 tsp freshly ground black pepper
- • 3 tbsp olive oil, divided
- • 12 oz broccoli florets, cut into bite-size pieces
- • 8 oz cremini mushrooms, sliced
- • 1 medium yellow onion, finely chopped
- • 3 garlic cloves, minced
- • 1 tsp dried thyme
- • 3 tbsp all-purpose flour
- • 2 cups low-sodium chicken stock
- • 1 1/2 cups whole milk
- • 1 tsp Dijon mustard
- • 1 cup finely grated Parmesan cheese, divided
- • 3/4 cup panko breadcrumbs
- • 2 tbsp unsalted butter, melted
- • 2 tbsp chopped fresh flat-leaf parsley
Method
Start the rice
Rinse the wild-rice blend, then combine it with the water and 1/2 tsp salt in a saucepan; bring to a boil, cover, reduce to low, and simmer for 35 minutes until tender but distinct, then drain any excess water.
Look for: The grains are tender with a slight chew and remain separate rather than creamy.
Heat the oven and season
While the rice cooks, heat the oven to 400 F and lightly oil a 9-by-13-inch baking dish; season the chicken with 3/4 tsp salt and the black pepper.
Look for: The oven is fully preheated and the chicken is evenly seasoned.
Brown the chicken
Heat 1 tbsp olive oil in a large skillet over medium-high heat; brown the chicken in a single layer for 5 minutes, turning once, until golden outside but not cooked through, then transfer it to a plate.
Look for: The chicken has golden edges while its centers remain slightly underdone.
Blanch the broccoli
Add the broccoli and 2 tbsp water to the hot skillet, cover, and steam for 2 minutes; uncover and transfer the bright-green, crisp-tender florets to the chicken plate.
Look for: The broccoli is vivid green and yields slightly while retaining a firm center.
Brown the mushrooms
Add the remaining 2 tbsp olive oil and the mushrooms to the skillet; cook over medium-high heat for 5 minutes without crowding until their moisture evaporates and their edges brown.
Look for: The skillet is nearly dry and the mushrooms have browned edges.
Build the cream sauce
Stir in the onion, garlic, thyme, and remaining 3/4 tsp salt and cook for 3 minutes; sprinkle in the flour and cook for 1 minute, then gradually whisk in the chicken stock and milk and simmer for 4 minutes until the sauce coats a spoon.
Look for: The sauce is smooth and leaves a clear trail on the back of a spoon.
Finish the filling
Remove the skillet from the heat and stir in the Dijon mustard and 1/2 cup Parmesan; fold in the drained rice, browned chicken with its juices, broccoli, and parsley just until evenly coated.
Look for: The rice grains remain visible and the chicken and broccoli are evenly distributed.
Top the casserole
Spread the filling in the prepared baking dish without compacting it; mix the panko, melted butter, and remaining 1/2 cup Parmesan, then scatter the crumbs evenly over the surface.
Look for: The filling sits loosely in the dish beneath an even, dry crumb layer.
Bake until bubbling
Bake uncovered at 400 F for 20 minutes, until the sauce bubbles at the edges, the topping is crisp and golden, and the chicken reaches 165 F.
Look for: The edges bubble steadily, the crumbs are golden, and the chicken registers 165 F.
Rest, serve, or reheat
Rest the casserole for 5 minutes before serving; to reheat chilled portions, cover and warm at 350 F until 165 F in the center, then uncover briefly to restore the crisp topping.
Look for: Freshly baked filling settles before serving, or reheated filling is hot at the center with crisp crumbs.
