Beef Tacos with Charred Corn

45 min · 4 servings

Ingredients

□ 1 lb 85% lean ground beef

□ 1 small yellow onion, finely diced, divided

□ 2 garlic cloves, minced

□ 2 tsp cumin

□ 1 tsp chili powder

□ 1 tsp smoked paprika

□ 1 tsp oregano

□ 1 tsp kosher salt

□ 1/2 tsp black pepper

□ 1/2 cup tomato sauce

□ 1 tbsp chipotle in adobo

□ 1 tbsp lime juice

□ 1 tsp honey

□ 3 ears corn

□ 1 tbsp neutral oil

□ 1/3 cup cilantro

□ 1 lime

□ 1/3 cup crumbled cotija

□

□ 2 cups shredded lettuce

□

□ 2 Roma tomatoes, diced

Directions

1. Mix the spices, reserving 1 tsp for corn. Blend tomato sauce, chipotle, lime, honey, onion, garlic, and water.

2. Char corn in a dry hot skillet, then toss with oil, reserved spices, cilantro, lime, and cotija.

3. Press beef into a hot skillet for a browned crust; break it up, then season with onion, garlic, spices, and water.

4. Toast tortillas until flexible. Fill with beef, lettuce, cheese, tomato, and smoky sauce; serve with corn.

Cook’s note: Brown the beef before breaking it up so it stays meaty instead of steaming.
