Bacon-Wrapped Jalapeño Poppers
A savory cream cheese and cheddar filling softens inside bacon-wrapped jalapeños, with separate sweet pepper bites for a milder choice.

These poppers pair the salty crispness of baked bacon with a rich, scallion-flecked cheese center. Removing the jalapeño seeds and pale membranes moderates the heat while leaving the pepper's lively flavor, and sweet mini peppers make a distinct mild option for the same platter.
Prepare the peppers carefully
Jalapeño heat varies from pepper to pepper, but scraping out the seeds and pale inner membranes helps keep the finished bite lively instead of overwhelming. Food-safe gloves also keep pepper oils off your hands while you prepare the cavities.
Keep the filling level
Softened cream cheese blends readily with the cheddar and aromatics, so the mixture spreads into each cavity without tearing the pepper. A level fill leaves room for the cheese to heat and bubble without flowing over the bacon.

Let the bacon brown on a rack
A wire rack lets hot air reach the underside of each pepper while rendered bacon fat drips into the sheet pan. Set the bacon ends underneath so they stay tucked as the slices tighten during baking.
Offer a mild batch
Mini sweet peppers carry the same creamy filling and bacon without jalapeño heat, giving spice-averse guests a recognizable option. Bake and plate them in their own rack zone, then use clean tongs to keep the mild pieces separate from the jalapeños.

Bacon-Wrapped Jalapeño Poppers
Ingredients
- • 8 medium fresh jalapeños
- • 3 mini sweet bell peppers, for mild servings
- • 8 oz cream cheese, softened
- • 1 cup sharp cheddar cheese, finely grated
- • 2 scallions, thinly sliced
- • 1 garlic clove, finely grated
- • 1/4 tsp kosher salt
- • 1/4 tsp freshly ground black pepper
- • 11 slices regular-cut bacon, cut crosswise in half
Method
Heat the oven
Heat the oven to 400 F and set an oven-safe wire rack over a rimmed sheet pan so rendered bacon fat can drip below the peppers.
Look for: The oven has fully preheated and the rack sits flat inside the sheet pan.
Mix the filling
Stir the softened cream cheese until smooth, then fold in the cheddar, scallions, garlic, salt, and black pepper until evenly combined.
Look for: The filling is smooth, evenly flecked with scallions, and holds together on a spoon.
Prepare the peppers
Wearing food-safe gloves, halve the jalapeños lengthwise and scrape out all seeds and pale membranes; halve the mini sweet peppers and remove their seeds, keeping both types on separate plates.
Look for: Each pepper half has a clean cavity, and the jalapeños remain separate from the mild sweet peppers.
Fill the pepper halves
Spoon the cheese mixture into each jalapeño and sweet pepper half, smoothing it level with the cut edges so the filling heats through without spilling over.
Look for: Every cavity is filled to its rim with no tall mound of cheese above the pepper.
Wrap with bacon
Cut each bacon slice crosswise in half and wrap one piece snugly around each filled pepper half, leaving the ends underneath to help the bacon stay in place.
Look for: The bacon lies flat against each pepper and its loose ends meet underneath.
Arrange by heat level
Set the jalapeño poppers together on one side of the rack and the sweet pepper poppers on the other, all with bacon seams down and a little space between them.
Look for: The spicy and mild groups are clearly separated, and no poppers touch.
Bake until browned
Bake at 400 F for 25 to 28 minutes, rotating the pan once, until the bacon is browned and crisp at the edges and the filling is hot and bubbling in spots.
Look for: The bacon has rendered and browned, cheese bubbles at a few edges, and the peppers have softened without collapsing.
Rest and serve
Let the poppers rest on the rack for 5 minutes, then use clean tongs to move the sweet pepper bites to their own plate before serving both heat levels warm.
Look for: The filling has settled slightly, and the mild pieces are on a separate serving plate.
