15-Minute Korean-Inspired Ground Beef Bowls

15 min · 4 servings

Ingredients

□ 1 lb lean ground beef

□ 2 microwaveable brown rice pouches (8.5 oz each)

□ 12 oz frozen broccoli

□ 1/4 cup low-sodium soy sauce

□ 2 tbsp gochujang

□ 2 garlic cloves

□ 1 tsp grated fresh ginger

□ 2 tsp honey

□ 1 English cucumber

□ 1 tsp toasted sesame oil

Directions

1. Stir soy sauce, gochujang, garlic, ginger, honey, and sesame oil smooth; thinly slice the cucumber.

2. Microwave rice as directed. Brown beef in a large skillet over medium-high heat for 5 minutes, crumbling it small.

3. Stir sauce into beef and cook 2 minutes until glazed. Microwave broccoli with 2 tbsp water for 3 minutes, then drain.

4. Divide rice, beef, and broccoli among 4 bowls. Top with cucumber and serve hot.

Cook’s note: Start the rice first, then microwave broccoli while the sauce finishes the beef.
